Description
The Mary Markley dining hall was originally platinum certified in 2015 and was recertified in 2019. Over 60% of the staff are Planet Blue Ambassadors and the hall has created a green team to continue to identify sustainability opportunities. Pre- and post-consumer composting is in place. Monthly review of energy use at kitchen staff meetings keeps energy conservation on everyone’s radar. The department is using compostable utensils, plates, and napkins when the dishwasher is not working. Food waste is minimized by being extremely attentive to ordering food so that nothing sits on a shelf past its expiration. Staff walk to almost everything. Monthly reviews on sustainable practices, billboards filled with sustainable practices and Sustainable Monday signs are presented in the dining hall.
